The King of Fighters Evolution
That's a weak choice compared to other King of Fighters titles on the system...
By that, I mean King of Fighter Dream Match 99. Hit that up instead. I'll let you know about more of my recommended titles later, I gotta finish up a paper.

Dreamcast - you need a boot disc, a CDX or a downloadable one are both fine
Saturn - an import cartridge. The Action Replay 4-in-1 seems the best bet as it includes a memory card and ram cart also

Or a US/JPN hardmod. It's pretty basic, you have to open your Saturn, remove a couple jumpers and wire a DPDT switch to them as well as the JPN points.

For the DC - Grandia II is the best! Although I must say that I found it pretty easy. The magic users were way to powerfull! I remember using Elena's "holy ?" magic to wipe out all the enemies.
I have over 200 games for the DC. Some other titles I liked:
REZ (can't explain :))
Worms World Party (party game)
Sports Jam (2 player party game)
MDK
powerstone (fighting)
Dead or Alive (fighting)
Fussion Frenzy (party game)
phantasy star online (sci fi PRG)
have fun with that system :)

You can chip the DC, it's not a hard mod, but it's a bit difficult to find the chip nowadays. You'd be just as well off finding a CDX or boot disc.
In addition to the Grandia II recommendation, be sure to check out Skies of Arcadia. There's a director's cut available for the GC, but the original is still quite good.
If you like anime/action RPGs, then Record of Lodoss War isn't bad.

If you've ever played and enjoyed any version of Daytona USA then pick up the Dreamcast Daytona USA (AKA Daytona USA 2001). While not like any other version (they're all different) it's a loving tribute to one of the most popular arcade born franchises of all time.
