anyone have any other player VS player that they think is fun?

Tons, here are my favorites.
North and South
Tecmo Bowl (and Super)
Super Dodge Ball
Baseball Stars
Excitebike (that's 2p right?)
Marble Madness
Super Spike V-Ball
Ring King
Ice Hockey
Racket Attack
Toobin
Family Feud
Double Dribble
Urban Champion
and these are just the ones I enjoy. Outside of these you probably have at least 20-30 more sports/game show/board game titles.

Bomberman II has a great 2-player feature.
Also add these

Excitebike is not a 2-player simultaneous game, so probably not what we are looking for here.

The ones I played most recently:
1. Super Sprint
2. Double Dragon (versus mode)
3. RBI Baseball 2 (mostly because it is a high scoring arcade title)

My faves (In order of total awesomeness - Serriously, check these out if you haven't played them with a friend):
Tecmo Super Bowl
Contra (HOW WAS THIS MISSED BY EVERYONE ABOVE!?)
Jackal (A sweet jeep-drivin, bad-guy-shootin, type game)
Micro Machines (Blows the great RC Pro Am out of the water)
Super Off Road (Get a 4 player adapter and watch the fun happen!)
Base Wars (Baseball w/robots..you get to fight eachother!)
Tiger Heli (Pretty sure this is a simul 2p game)
Spy vs. Spy (Great, but only when both players are farmilliar wih the game)
River City Ransom
Tiger Heli (Pretty sure this is a simul 2p game)
God, making this list makes me realise that I don't play enough NES!

I believe the OP was looking for PvP games not just simultaneous 2p action, so contra (and the other konami games mentioned)wouldn't count. Though they are good games. But here's some that haven't been mentioned:
Mario Bros - Can't go wrong here, Hardcore 8-bit PvP action
SMB3 - just load up and press a as soon as the game starts and play...mario bros vs each other
Duck Hunt! - In 1 duck mode (maybe in 2 too, not sure), anyway, in 1 duck mode, you can control the duck (it's more noticeable when the ducks get faster)
Rampart - One of the greatest PvP titles of all time (tho the SNES version is better)
Ivan Ironman Stewart's Super Off Road - Not only is it PvP, but it's PvPvPvP, in other words, 4-player simultaneous competition (you need a 4-score or a satellite)
