After completing Super Castlevania 4, Rondo of Blood, and Symphony of the Night in the past two weeks, I'd have to say that Castlevania is my favorite series. By far.

I can't even come up with 10. Of all of the series I like there are usually one or two games that stink (like Grand Theft Auto say - the first two games don't do it for me).

Personal list:
Ghouls'n Ghosts/Demon's Crest/Maximo games
I haven't played a Maximo yet, but if you ask me they've done a better job sticking to the action roots of the series than Castlevania has managed lately, especially in the graphically pleasing port known as Chohmakaimura - R or Super Ghouls'n Ghosts. From the Spectrum to the Sega Genesis and Super Famicom, from the arcades to home conversions, and sometimes even coinop conversions of home conversions, with different combinations of 'n and 'n' thrown in with some of the cookiest looking foreign (foreign to Japan) game artwork seen outside of other Capcom titles, G'nG has always been about running and gunning...with lances. Lots of lances.
Castlevania
Pre-1997, with a couple nice spots inbetween. Despite playing
90+ hours in CotM, single save file, it's not a standout in my opinion. AoS is one of my all time favorites, though, and LoI might soon be as well. So much iffy/wrong/silly ("deep" storylines do not belong in CV, IMO) with this one lately, but nothing can undo my undying love of Akumajo Dracula x68000. I didn't mean to put a pun in there, honest.

Reasons why:

Shadow Dancer (arcade, the home version on Mega Drive is quite decent as well)

Now there are a few horrible, HORRIBLE games in the series (mostly The Cyber Shinobi for the Master System...WHY it plays as badly as it does I have yet to figure out, but I suspect part of it is the terribly jerky animation, despite having a status bar filling up literally 1/3 of the screen, and I'm not a terribly big fan of Revenge of Shinobi, especially not on the GameBoy Advance...) and I know little about the Saturn Shinobi that used actual actors (ala Mortal Kombat: The Movie) but I honestly don't care. Shinobi is one of the best action series ever...it's all about action, despite the name ("stealth") but the character fits right in. Let's hope the next Shinobi game expands on what Shinobi PS2 left untouched, and capitalizes on its possibilities in terms of level design. Fun fact: Alex Kidd can execute a walljump (after being possessed by the spirit of a ninja, anyways).
Metroid
You know what, I haven't beaten the original Metroid yet, on any of the four platforms it appears upon (disregarding differences of PAL and NTSC, this is true)...but part of the fun of gaming is getting to know these games, and know them well. Learn Metroid and you won't regret it. Sure, some of the rooms are taller than you might like...but it doesn't take too long to get around. Super Metroid worked on these "flaws," and even Metroid 2 does an appreciable job on its system. Prime, of course, promises to lead this series into the future.
Zelda
Though I haven't played this series much within the last few years, I had tons of fun with the recent N64 titles. Finally getting to play the earlier games: Link to the Past rocks, I hear the B&W gameboy one does as well
Contra (again...pre-PSX titles, haven't played the PS2 one yet, the "new" GBA title is unfortunately woefully silly -- the everbouncing powerups are a terrible addition. This is something that needs to be sorted out sometime soon, rather than later.)
Last Blade (can we throw in Samurai Shodown? PLEASE?) Last Blade 2 is my favorite weapons based fighter, and best fighter in terms of realtime strategy for myself. Not much else to say about it; I'll forego the customary "Ever." Instead, I'll just say that the animation and music are a big part of the reason why; the fighting style is the rest.
Vampire Savior/Darkstalkers: reasons why should be obvious. If I was a bit better at the fighting style I would like it more, but that's a minor point really. Along the same general lines of this game, for myself, are Cyberbots, which I'm very impressed with, and perhaps a couple of the better SF titles.
Honorable Mentions
Shantae--haven't played this, but I'm looking into it. Thanks to somebody in this forum who, for some reason I haven't determined yet, caused me to look at their website, which mentions this title. Looks awesome...perhaps the most stunningly done graphics on the GameBoy Color, gives a large number of GBA titles a run for their money. The gameplay style seems like it will be very unique--a bit of puzzles. Perhaps another take on Metroid, in another world. Check this one out.
Metal Slug--worth getting, but unless the newest game is slimmed down considerably from the latest titles and those prerelease screenshots are beautified considerably in the final version, it won't be able to hold a candle to the great, simple 8-bit action of Contra. Still...Eri makes up for all the clutter in the newer versions :)
Ikari Warriors--I'm not terribly familiar with this one, but it's another great SNK (er, right?) three-quarters top view shooter in the style of SAR (Search and Rescue). Fun stuff! Playmore would do well to ressurect this series.

Thats good. new mario and new megaman is blah. I like the older final fantasty games for nes-snes better then new school ones though I dont really like final fantasy that much anyways. 2d all the way cept on mario kart cause its a fun 3d game. Bomberman 2d is better than 3d too. Too bad you didnt include sonic.

In order in which they come to me:
Final Fantasy - Until 8, I was practically in love with this series...VIII was alright, I'm forcing myself through IX right now....the simplistic plots, irritating characters and crappy dialogue is killing me...X is horrible. I refuse to buy X-2, XI isn't my cup of tea seeing as it is online, and the jury is still out on XII.
Super Mario Bros. - I realized the other day I have been playing Mario games for the last 15 years...3/4 of my life.
Zelda and Metroid - Both of these series bring a tingly sense of joy to me.
King of Fighters - I hate 3D fighters. The commands are all irritatingly similar directional pushes (versus joystick rolls), the combos are even worse. And they're slow. 2D fighting is the pinnacle of the genre IMHO, and King of Fighters is at the top.
Metal Slug - This along with the aforementioned are the reason's I'm still trying to get ahold of 10 year old hardware (neo geo).
Doom/Quake - While they might not be the first FPS or the first 3D FPS, they really made the genre for me. Quake is "Pure" if that means anything to anyone. In the sense that its Deathmatch at its bare essential, nothing fancy, even though it is themed, it really doesn't seem to have one. It exists outside of time in its own realm of lovely gore. And the soundtrack was brilliant too.
FALLOUT (RIP) - Interplay will burn in hell for canning Fallout 3. No other RPG has captured the amazing feel of these games. I remember the first time I killed Gizmo, blew a chunk through his torso and chair and his body collapsed in a meaty pile on his desk with a satisfying wet *squish*. I was hooked after that.

So many...
Zelda has been consistanly amazing.
Final Fantasy has a few games I didn't care for but as a series it has some of the best scoring and memerable gaming moments.
The Bard's Tale triology had me drawing on grid paper all threw middle school.
The AD&D Gold Box games, Pool of Radiance, etc also hold a place as constantly great titles that took up my 11-14 year old nights.
Mario Kart has always been a Vs. favorite.
Mario & Metroid has not dissapointed even with the move to 3D.
I wish I could say the same of Castlevania, DK, Zork and Sonic but the move to 3D has yet to impress me on these titles..

First things that popped into my head were Final Fantasy, Sonic and Mario, but I then decided to actually THINK about my answers and not include serieses that have been so up and down. So I won't apologize and qualify my answers with "only certain ones in this series"
1) Phantasy Star. Without a doubt I have loved every single game in this series, even 3.
2) Shining XXXXX. Was just going to say Shining Force, but -in the darkness, -soul, -holy ark are all games I love as well
3) Zelda. Even though I personally don't like the 2 N64 Zeldas, I recognize their quality.
4) Lunar. Only 2 real games in America, but they still live on...
5) Metroid. Every game fantastically well done.
6) Katamari Damacy- it WILL be a series, just you wait :)

Shining Force Series (That's what it's called), Legend of Zelda series, Sonic The Hedgehog pre-3d series, Pacman series, NHL Genesis series, and Kirby stand out as some of the best to me.

Sorry to be such a big cliche, kids, but without a doubt it's the Legend of Zelda. Even after I kind of grew out of console gaming (prior to the PS2, my last system had been the original NES), the Zelda series always kept me lingering around the fringes before jumping back in head first back in 2001.
The other series which needs a little love is Monkey Island. They have never been the same since Rob Gilbert left, but man, I don't know if any series has entertained me as much or made me laugh as hard as those first two games. Awesome stuff.

I never played it, but was afraid of that. I was never able to finish the third game and when the fourth one switched to (crappy looking) 3D I decided to preserve my happy memories and moved on. Undoubtedly, the series lost it way when Ron Gilbert left. Lame sequals aside, the original two will always be gaming gold.

for me, my top 2 are very easy to pick, only because most other series, i only love 1 game in their series, maybe in 10 years i might change #3 to HALO, since HALO is 1 of my top 3 games EVER to come out.
Mario gets my #1 spot Because super Mario 3 (NES) is my #1 Favorite game EVER!!! and this game (for me) is far above any game ever released!! and i have not played a Mario game that i don't like. but there are 1 or 2 that i have not played yet.
Resident Evil get #2 because the first Resident Evil scared the Shit out of me! (and still does hehe) and is my 3rd favorite game of all time.
i love the remake of Resident Evil 1 on the gamecube over the playstation version. i have almost all the Resident evil games, i wish i could say that there is no Resident Evil game that i don't love but there are a few that just plain STINK! but there are 6 games in the series that have taken Years of my gaming life.
Castlevania get #3 (for now) it was tough picking #3 because there are a few other series (Doom, Tomb Raider, double dragon) that has as many games that i liked, but that's it, i have liked them, not LOVED. i have enjoyed almost all the games that has came out in the castlevania series.

The Mario series is my favorite.
In no particular order:
Sonic the Hedgehog - I loved almost all of these game. Classics in their own right. My nieces still get a kick out of playing these games.
Castlevania - one of the best side scrolling games of its type. This thing just keeps going and going.
Zelda - I don't have them all, but of the ones I have, they are all rather good. (I'm currently working on the Minish Cap for the GBA).
Streets of Rage - I loved playing this game when it came out, and I still like playing it today. It is just simple classic gameplay at its best.
Metroid - Cool series of games, which for the most part have been getting better with age.
Pac-Man - the old lemon dude with the wedge shaped mouth. How could anyone not like this game, and all the sequels that have come afterwards. It never stops - and I don't think it ever will. The sounds effects are recognized by almost everyone on the planet!
Bomberman - This series rocks! And to be honest, I only got hooked on it last year (when I bought some used game and the GBA classic version). Now I plan on getting as many of these games as I can - they are so addictive.
Wizardry - This is probably the first series I even got into. I remember playing this thing (the first four) for many, many hours when I was a younger dude.
Donkey Kong - Started with me on the ColecoVision, and just went from there.
Diablo - now this one and its sequel are probably my favorite hack'n slash type of adventure game. I've put in so much time playing this game, that I hate to think of all the creative things I could have done otherwise. Then again, I had so much fun, so I don't care about that creative thing. :D
Dungeons and Dragons - any incarnation of this game series was good (well, almost all of them). I have not played many of these in years (with the exception of Dark Alliance), but I do remember having lots of fun when I was not pushing 40!
Space invaders - last but not least, I just can't get enough of this game. I try to buy every version that comes out (for systems that I have). The latest was the killer version for the GBA, from 2004 (or possibly 2003).
