As far as I know:

Saturn: S-Video
Dreamcast: S-Video (It can also output 640x480 VGA, I believe, but some games don't support it.)
Sega Genesis/Sega CD: Composite
SNES Model 1: S-Video
SNES Model 2: Composite

At this point your best bet for finding these cables would probably be eBay, IMHO. I think Nintendo may still sell S-Video cables for SNES in their online store. The S-Video cable for Nintendo 64 and Gamecube will also work on the SNES, as all three used the same connector plug design.

without going into the whole modding for RGB thing

S-video for Saturn and SNES

composite for genisis (though you can mod the system for s-video relativly cheaply)

and if your new tv has a PC input you can use a VGA box for the dreamcast
if your new tv just has component then you could get a DC VGA box and an audio authority VGA > component converter though thats going to cost you about $100 all together
most DC games support VGA

you can get the cables a few places, EBAY acually usually has decent prices with cables but they screw you on shipping which usually ends up more then the cables. i found an SNES S-video cable just last week at my local EB games.
