Start here - MAMEWorld.net (http://www.mameworld.net/).
Also Google "mame cabinet" and you'll find a lot of sites people have set up documenting their cab constructions / conversions. That's the best way to get ideas flowing.

heres an easy way.
mod an xbox, install mame on the xbox, mod xbox controllers to joysticks, an you can use TV output or get a VGA adaptor. :) Thats what i'm doing. I just need to assemble the cabinet and i'm done (besides painting and such)

Well you need
The circurt board that you will be using. Basically the system.
A TV screen that will work for your bored. Like one of those tube screens.
You will then need to measure and create thumb nails or example of how your completed cabinet will look and work.
The TV you will be using needs to harnessed and is going to weigh alot.
Lets not forget about the controllers, lgiht guns, and etc stuff. The coin slot you wil be installing might be programmable for diffrent amounts.
Lastly but first check if everything is working before you start construction.
make sure you make it so the tv turns on with the board and thus the installation of the power button.
Also maybe it could have cool features like it has a backup power generator on baord in case it plugs out or you want to save scores. IF so make sure the on board battery is good. It is much better then playing frogger with arcade machine with an extension cord.
Build the case and put everything in.

dude, you obviously know slim to nothing about this stuff..don't give the guy advice thats not legit.
the coindoor is a mechanism that is wired just like any butotn. so say you wire it to a keyboard with on the number 1. Then in mame you set it to 1 in the controls. as for amount of money, thats all in the dipswitches. rugal sizzler doesn't know what he's talking about with mame PC's. so ignore him.
the reason i said to use an xbox instead is you can buy all sorts of fighters that can't be emulated (soul calibur 2, the new mortal kombats, street fighter 3 third strike) and back them up on your hard drive. :)
oh yeah, and um apparently he's never been to an arcade since arcade cabinets have Power cords not battery power. o_O
