I just got an Ipod touch so now I'm looking for some games.

One of the early games I picked up was Sentinel, and when Sentinel 2 came out, they renamed the first one Mars Sentinel. Sentinel was my very first tower defense game, and I found it to be addictive as hell. Sentinel 2 ramps up the awesomeness, it's well worth jumping over the first game to play the second.
Arcade Bowl by Skyworks is a skeeball game that is literally a timekiller that you can just pick up and put down rather than investing hours into. And as a bonus, it was programmed by David Crane, creator of Pitfall!
Fission Quest was a nice little puzzle game, set in a nuclear waste storage facility with you having to move barrels around the assorted maps and negotiating platforms and conveyor belts. Why anyone would build a nuclear waste storage building with crazy floor plans and one-way conveyor belts crisscrossing the place is beyond me... That just seems like a safety violation waiting to happen.
Downhill Bowling is another one I keep on the ol' iPod at all times. Imagine trying to bowl down a mountain path, with pins set at hundred yard intervals, with power-ups, jumps and cannons to keep things going.
Here's some other good games that held my interest: Hero of Sparta (a God of War clone), Auto Mangle (destruction derby/car combat game), Kroll (another good side scrolling hack-and-slash game, but on rails), and Flick Bowling (probably the best bowling game on the iPod/iPhone). Other non-game apps I keep on mine are the Video Game Trader Price Guide, The Weather Channel app, Associated Press Mobile (news), Sci-Fi Wire (SyFy Channel's industry news), and I Can Has Cheezburger (also giving access to their network of associated sites too).
A couple recommendations:

Real Racing
Monkey Ball 2 (the first one controls like shit)
The free Volkswagen games
I'd like to know about people's favorites too because I need to buy a new game soon.

I just got my iPod Touch a month ago and I love it. My top 5:
Arkanoid - plays great, looks great, it's basically perfect.
Transylvania - great port of the Apple ][ adventure - original Apple graphics with new sfx and some conveniences for input besides typing "n" or "show cross"
Dungeon Scroll - defeat D&D monsters by playing Scrabble. Very addicting.
Missile Command - great port with classic and "new" modes. Your fingers can cover the screen a bit, but it's still very playable.
Metal Gear Solid Touch - shooting gallery w/ great graphics and an excellent "pinch-to-zoom" sniping mechanic. I'm not a huge fan of the franchise, but I really enjoyed this.
If you can't do it with 8 bits, you don't need to do it!

I too have only just picked up an iPhone over the last few days, my thoughts on the games I've paid money for:
Canabalt - really good fun, really simple, excellent sound/graphics/addictive game.
Wurdle - addictive, quick, find the word game. very good.
Space Invaders: Infinity Gene - an excellent 2d shooter - takes Space Invaders but gives you full 2D movement, also has great music
I Love Katamari - this is horrible. avoid. The problem seems to be less in the motion controls but more in the need to collect almost all items of one type before you can move on to collecting ones of a slightly bigger size. Not fun.
I'm inclined to agree. The design just didn't come together, and the result is tedious and sluggish. Plus there are only five stages. Definitely try the demo before buying this one.
Sadly, my reaction to Ace Combat Xi is much the same. Namco made another excessively shrunk-down port (only 5 missions???) with lousy control. But now they plan to nickel and dime us with DLC expansions instead of releasing a good game up front. Meh. My advice: wait for Hawx.
Another turd: Silent Scope. It's a very complete port, but the frame rate is horrible, and the control is incredibly awkward and slow, making anything but the first stage totally unplayable. The GBA version is a vastly superior game.

Well that's convenient, Hawx just came out today! Overall, it's much better than Ace Combat Xi. There are 12 missions, a couple dozen planes, and the control is much, much better. You can use either tilt control or an onscreen stick. The frame rate does drop a bit more than AC, but only just enough to be noticeable; I didn't have any difficulty because of it. Hawx also has 4 player LAN play, though I haven't tried it yet. I'd say it was definitely worth $7 (and 250 MB).
Lo and behold, Pac-Man Championship Edition just hit the app store today.
It's $3 (most likely for a limited time). And this version has DLC.
Dragon's Lair is up, too. $5.
EDIT: Stay clear of Pac-Man CE. The controls suck donkey nuts.

Cool thread. I got an ipod touch as an early xmas gift from my gf's grandma and been wondering what games are worth while. Seems like all apps are rated 3 stars or lower so and that makes it hard to choose what is worthwhile.
So far I've only messed with free apps because it seems just to easy to say "it's only a dollar" and end up with more than I have time to play. That Transylvania one does sound pretty sweet though.
Any reccomendations for internet apps? The myspace and facebook ones work pretty well, but the wikipedia one is so slow its just easier to look it up with the browser.

I think the dual d-pad control works quite well, personally. The other options aren't so hot, though. In any case, it's better than the 360's awful d-pad, but I think a PSP version would be the best scenario.
The ebay application works quite nicely. It's almost more convenient than the actual web site. Also, get AppMiner. It's great for jumping on sale prices and promos.
I got the ebay one, seems to work great! I'll check out appminer next.
