Here are some excellent platformers:
Super Mario (of course). From the original to Super Mario World 2: Yoshi's Story. Play them. Love them.
Adventure Island I-III for the NES and New Adventure Island for the Turbographx-16 are super fun run and jump at break-neck speed games. Wonderboy for the Sega Master System is like the fraternal twin of Adventure Island and is also worth checking out.
Ninja Spirit for the Turbografx-16 is simply a splendid game that is as much fun to play as it is to experience. On PC-Engine Mode the game is a bit too short, and on Arcade Mode it is a bit too difficult.
Contra series. If you don't know the code you should question yourself as a retro gamer. No offense, Emperor Megas.
Bionic Commando for the NES is a super cheap game that doesn't get as much respect as it deserves. If nothing else, how many NES games bested their arcade counterpart?
Since I'm talking about being under recognized, Mappy Land for the NES doesn't get enough recognition for being as much fun as it is.
Kirby's Adventure brings light-hearted, engaging platforming to the NES.
Donkey Kong Country for the SNES still looks and plays great.
Goonies for the Famicom rocks as does the challenging Musashi no Ken!
Genji Tsushin Agedama for the PC-Engine is a great Japanese on-rails platformer that never made it to North America.
Duck Tales for the NES is timeless, pogo-hopping fun.
Mega Man II for the NES is sublime- just ask Satoshi Matrix.
Metal Storm for the NES. Don't take my word for it. Take the Happy Video Game Nerd's.
I really dig Phantom Fighter for the NES, but it ain't for everyone. It takes a proverbial minute or two of powering up to make the game fun.
Ninja Gaiden games on the NES are difficult and part of every grownup kid's collective nightmares as memories of cheap hit after cheap hit haunt us many years after we gave up.
There. That should be enough to keep you entertained for a while.

Then on Genesis some good ones are:
Sonic the Hedgehog (series) - I really enjoyed 1 thru Sonic & Knuckles and also really liked Sonic 3D Blast.
Ristar - platformer where you grab onto objects to attack them or climb your way through levels. well designed
Dynamite Headdy - game by Treasure which feels and plays a lot like Ristar, but this game came out first. You get to fight some really wacky bosses. It's quite entertaining.
Taz-Mania - one of the best platformers based on a WB cartoon character
The Jungle Book - This is a very good platformer game based on the animated disney movie.
X-Men 2: Clone Wars - while the first X-Men for Genesis isn't as great as it could have been, this sequel makes up for it. It may be very hard to actually beat, but it is fun to try picking different characters for different levels and try to remember who was best for what area. Get as far as you can and it's still fun.
Other NES:
Chip N Dale Rescue Rangers - very fun and easy to control
Mickey Mousecapade - this game is pretty short and basic but still fun
Yo! Noid - the later levels take some practice but I always liked the music and art direction of this game. If you can get good at those pizza eating contests after the levels or the whack a mole mini games, it's very doable.
Big Nose the Caveman - the artwork is repetive in levels but the game is really fun. Good game music too.
Tom & Jerry - This game can be kind of tough sometimes but with practice it's beatable. It's always fun to play this game and think of all the silly stuff the characters used to to in the TV show. I like this game much better than the other versions where you control Tom instead of Jerry. Being a mouse where household objects look giant is just much more entertaining.
Not really a ton of great ones on the N64. I'd say SM64, the Banjo games, Conker's BFD and DK64.
