Space Quest VI has a three stooges arcade fighting game you can play which was pretty unique. Not sure if this counts as it is a PC game but it was certainly one of the most memorable parts of this game.

Wiggy brought it up that's why I said it.
I think some of these compilations have been mentioned not because of their content, but because of their interfaces. Take Namco Museum 50th Anniversary Collection and its arcade interface as an example. I think Tanooki mistuck that as people just mentioning any and all arcade collections.
Has Pinball Hall of Fame: The Williams Collection been mentioned yet? Been years since I fired up the previous Gottlieb release and don't remember its interface, but this one definitely counts.

The Gottlieb and Williams hall of fame pinball games both have a pinball hall with the machines you scroll over to and activate, even the larger Pinball Arcade is kind of this way as you scroll through coin mechs and back glass art, select a game and then it scrolls around the full table until you hit a button/touch it to get the game fired up.
The Midway collection that I kind of mentioned, the tablet release has a faux arcade hall which has the various machines you can 'walk' up to to play.
