Default Easiest way to generate ISO/mp3/CUE from discs?

Let me start by saying I'm a dinosaur, even though I use them quite often most of my software tools are about 20 years out of date. While I have access to others my main desktop runs XP and I mostly use CDRWin.

I don't fool with emulators that much, but lately I've been messing around with a bit of PSOne emulation, with some sporadic MCD and Duo stuff thrown in. Is there an easier process of generating ISO/mp3/CUE files from discs? Right now I'm using one program to rip the disc, another to convert wav to mp3, then manually editing the cuesheet in notepad.

If I'm not mistaken Nero will generate ISO and mp3 automatically from a disc but doesn't make a cuesheet.

I'm not certain, but I believe http://www.daemon-tools.cc/ might provide a good option. It might have been what I used to copy some of my PlayStation and SEGA Saturn games in recent years, but it has been so long that I don't remember for sure.
