I voted for GameCube, but only because the only cross-platform games I've purchased (others were sent to me to review) have been for GCN and PS2 only. Realistically it depends on which version if the game is the best (suitability to that system's controller, added features, etc.) so it's really a game-by-game thing, but I think the Xbox will be my system of choice in the long run for multi-platform games.
if its a tony hawk game then i pick it up on ps2 becuase the controllers have response that blows the xbox ones away (even with the xbox/ps2 controller adaptor)... however, most of the time i pick up cross platform games for the xbox.
progressive scan and/or high definition (on every title), 5.1 dolby digital (on every title).... and tolerable controllers on all but the most precise games.

You pick it up on PS2 for the controller, X-Box for the extra features, and GC....well, I can't think of any reason why someone would buy a cross-platform game on GC when they own 2 or all 3 of the systems.
PS2 for the controller AND.....
If it's that good of a game, it might come out on the greatest hits series, so I can get it for 1/3 of the launch price if I wait a while
Gamecube - It has the best combination of sound, playing, graphics, controller, and cost. It's not strong in ANY of those categories, but it's not really weak in any of those categories either (Like the PS2 graphics, or the X-box controller, cost, size, and well, all the other stuff beside graphics
