Just a few of my favorites. The adventure genre is quite expansive (a lot of crossovers from every different genre), you might want to narrow your search down a bit.
You simply MUST play Beyond Good and Evil if you haven't already.

Lord, Beyond Good & Evil can't get enough love. Another vote for it from me.
Prince of Persia Sands of Time is a goodie, too.
Not really sure how Project Eden turned out on PS2 (I own it but haven't gotten around to playing it), but the PC version was really fun co op.
and curse you Headhunter fans! I swear to god one of these days I'll finally play the damn game (picked it up a few weeks ago finally). Maybe I'll start a Renderware subcollection (now THAT would be interesting)

Ico isn't bad either.
Sphinx and the Cursed Mummy is more than decent. Really cheap, too.
But Beyond Good and Evil is your first priority.
One more vote for Beyond Good and Evil.
Ico is, of course, also a modern classic.
The Fatal Frame games are also great for a good scare, and not quite as combat-oriented as most.
Resident Evil 4 is also very worthy of all of the praise that's been piled onto it.

I second Fahrenheit/Indigo Prophecy...I had a blast with that game.
It's easily completed in a day or two though, which can be good and bad.
