Ok, you made me dig into my filing cabinet of cheats ripped from mags. I found it in an old EGM2 issue (not sure which issue, but it was part one of their SOTN strategy guide...page 98, if it matters). It reads as follows:

"There is evidence that a level from the game may have been cut from the final release. When starting the game as Richter, press back as soon as the game starts. You should fall through the gate. The screen will flash, but you can get things back to normal by doing special moves. What's strange is that it leads to three new rooms, including a save point. Even more interesting is that the grate opens..."

So, I had the trick slightly wrong, as I thought it was done with Alucard by running very fast to the left or something. But anyway, yeah, that's how you get there. I've always wondered if these hidden rooms looked the same in the Saturn version where they have that extra level there (I think that's where it is).

Animal crossing had many an NES game in it (at least the GCN version did).

Star wars Rouge Squadron 3 contained all of the RS 2 levels (sort of counts, right?)

Shenmue had some arcade games in it.

Metroid Prime contains teh original Metroid (as did Metroid Zero Mission).

E.T. contained Pong...I think...

all I can think of for now.

Adventures of Major Havoc had Breakout in the screen before each level.

Donkey Kong 64 - with the original arcade DK - also came to mind, but I can't remember if you can play the original DK in-game, or if you just unlock it.

You play it in game, you walk up to an arcade machine that's randomly sitting in one of the levels and play it XD.

Also

In Time Splitters 2 (Xbox) you could find carts in game for the really old arcade games: Anaconda, RetroRacer, and AstroLander... once the games were found you could go to your watch/menu at any time in game and play them.

Is the original Rampage also on the ps2 version of this game?, or did the wii version get special treatment? Just wondering, as i might want to pick this game up then. :)

Yeah, the PS2 version also contains the games. =)

space quest 5 had a battleship clone in it, now that was a fun game. I had a save point right before it so i could always play the game when i felt like it

Beyond Good & Evil has a disc game (similar to air hockey) at the Akuda Bar, and you can access another game once you've collected all 88 pearls.

Monster House (GBA version) has a playable video game entitled "Thou Art Dead" that is accessible once the game has been completed.
