SNK: For giving us Psycho Soldier, Neo Geo (with all the great series)
Sega: For being the number 1 aracde company with Teddy Boy, Space Harrier, After Burner, Crazy taxi, Virtua ****** and home projects like Rez, Streets of Rage, Sonic no one can go around them.
Hudson Soft: For bringing Bomberman and lots of other great games especially on the PC-Engine.
Capcom: For their strong arcade games with games as Street Fighter, Alien vs Predator and D&D on CPS2, put also long gone classics like 1942 and Ghouls and Ghosts. One of the few companies which knows how to make a good game (sadly most current gamers only know them from Resident Evil).
Nintendo: Although there were some bad years especialy with N64, they are still a great company which can make standards and innovate like no other company. Also I need to credit classics like Mario Bros (not Super) and Donkey Kong as some of my favorite eighties games.
And that are the 5 I wanted to mention.

My favorites?
Taito - Technically a subsidiary of Square-Enix these days, they made some of the best games of the 70's - 90's. If you compiled a list of the best Arcade games of all time, the list wouldn't be complete without Space Invaders, Bubble Bobble, Bust-A-Move, and the Ray series.
Namco - Has made amazing games back in the day and to the present. They're one of the few to have lasted this long and still made great games. The Tales games are a personal favorite.
Nintendo - Might be a bit biased as I grew up on these guys.
Konami - Best 3rd-party games of the 8-bit era. Plus they still make great games.
Atlus - Does a great job of localizing what would otherwise be ignored in the US. Their offerings for the handheld systems are what keep the role-playing genre alive.

My top would have to be pre-2003 Sega. JSR, Shenmue, Skies of Arcadia, hell any first-party Dreamcast game counts. Also any and all AM2 games on the, well, anything.
Second would be 5th-generation and before Codemasters. EVERY game they released on the Mega Drive was pure gold, and their Playstation efforts (Colin McRae, TOCA, Music) were pure class. Oh, and Dizzy. :D
Third: Rare. Even their clunkers (early Xbox 360 titles like PDZ and Kameo) had a charm and appeal you can't find elsewhere.
Others include the obvious Nintendo, Namco, Konami, SNK, Square-Enix and Capcom.
Some of the more obscure ones worthy of praise though have to include Team 17- if only for Worms alone- Oddworld Inhabitants for their sheer creativity, and Llamasoft for its uniqueness and 'closeness' to its cult following.

Bioware: Unbelievable track record with multiple titles. Of course, I took notice and have been hooked since Star Wars: Knights of The Old Republic.
Bungie: One of the best shooter makers around. Sure they only make Halo games(for now) but Halo is one of the greatest fps series in history and thats thanks to Bungie.
Konami: I love the Silent Hill and Castlevania franchises but even those have slipped over the past few years. Hopefully they return back to their former glory.
Lucas Arts: I have so many fond memories of so many different Star Wars games, most recently The Force Unleashed.
Namco: The Tekken and Soul Calibur series are my favorite two fighting game franchises. I always have hours of fun with each new entry.
