I'm going to answer this one a few different ways...
If we're talking game collecting, I'd have to say an Adventurevision - complete in box - found at a garage sale. (Somehow the garage sale thing would make it feel much sweeter than just buying one - not that I could do that either!)
If we're talking something a little larger, there's a room I've built in my mind over the years that combines a lot of the different places I've spent a lot of time in (arcades, bars, pool halls, etc) - If I had the cash, that (relatively) large room would exist in the real world.
Finally, if we're talking abstract, my holy grail is to recapture that feeling of being a kid playing an arcade machine without a care in the world again. I've caught glimpses of it from time to time while playing on my cabinet, but it's an elusive feeling to say the least. (Even more so than that "in the zone" feeling where you're basically playing on instinct)

My personal holy grail would be Super Mario Bros, Sonic, Keith Courage...... j/k
I can't really think of anything that I want for a personal holy grail, so many games out there that I would love to own.
One thing that I would love to own, but really haven't gotten around to getting, is the very first issue of Nintendo Power. I would love to have a mint copy of that to frame it. Not very expensive, but something i've always wanted.

Any of the Sachen or Rocket Games carts for the Game Boy. All of which are unlicensed.

I can't find Muncher for Bally Astrocade anywhere, not even ebay. And my girlfriend loves her Pac-Man clones (as do I). If I cant find the R8 original game, at least somebody please make a new freakin' multicart or flash cart already!

U.S. Metal Slug X for the NEO GEO AES is my personal holy grail.
The game is just so awesome and one of the best co-op games ever imo.

My Grail used to be Battlesphere for the Jaguar... but I got it about a year ago. My collecting feels kind of aimless since then. There aren't really any big-ticket things left that I really care about... I mean, Time Gal for LaserActive would be neat, but I can't get too excited about that.

Mine would probably be the Haunted Castle arcade game... I'm a big Castlevania fan and even though that game is reportedly awful, I really want to try it myself. I'm sure it's not all that bad. Besides, it'd be nice to have just for rarity, too. So in a way, Haunted Castle is what I want for both rarity and personal fanboyism.

It really is hard to say. There's no specific item that I have a constant urge to get, inexpensive or otherwise. There are just so many (relatively) inexpensive items that I want / would that I can't decide which to go after first.
In a way, every find is just another milestone on the journey to the final goal. Perhaps it's better if I never get there. That way I will always have something to look forward to.

I have a few actually:
1. Panzer Dragoon Saga for the Saturn. I would LOVE to get my hands on a copy of this game complete, but i don't really think i'll spend the $600 that people want for it on eBay.
2. Super Robot Taisen (the original 1991 game) on the Game Boy. I absolutely love this game, i have the cartridge, but i can't find a complete version anywhere, in the US or Japan.
3. Magic Knight Rayearth for the Saturn. This was the very last licensed Saturn game released in the US. I have the Japanese version, but i wouldn't mind spending a bit to get the much more rare US version complete in box.

I would say Mogul Maniac for the 8 bit (Romox Cart) for the plain reason I have never seen another one anywhere on the web. To my knowledge any images you see of this game have been sent by me to atarimania .
Then again my atari XEGS could be up there cause it has survived being my system for over 25 yrs.

I guess mine really would be Suikoden II, I've had Suikoden before but never found a copy of the sequel at a resonable price.
