I haven't been able to find a good list anywhere on the web. Perhaps we can get one started (unless you know where to find one already). Here's what I've got:
Ridge Racer
Ridge Racer Revolution
Ridge Racer V
Gran Turismo
Gran Turismo 2
Initial D (original PS1 version)
San Francisco Rush (this surprised me)
Namco Museums
I've heard that at least one Wipeout game works with it, but I'm not sure which. What else do we need on this list here?

Wipeout 3 does for sure.

I'm pretty sure Rage Racer uses it too.

Wipeout 3 does for sure.
Okay, cool. I'll be sure to test XL eventually, too.
EDIT: Yeah, XL is good too.
Additional findings:
Need for Speed
Twisted Metal - This is a weird one. It almost works, in that you can use all the buttons for menu navigation and whatnot, but the twisting doesn't actually work, and the control settings don't actually show it being a NegCon. Probably unfinished support.
Cybersled - Works fine, but it makes for a rather awkward control scheme.
Keep 'em coming!

Ridge Racer Type 4 does, as well. It even has a 3D-rendered NegCon in one of the option menus when you have the NegCon connected.

Okay, I figured Rage Racer and RR4 supported it too, but I don't own them, so I didn't want to just throw them in the list. Maybe I'll have to dig those up at EB and/or Game Rush.

Ridge Racer Type 4 is pure bliss with the NegCon (just make sure you change the default button settings). You definitely should pick it up. :)

not to derail the post....
but is there any other game besides Ridge Racer 4 that uses the JogCon?
I kinda like that controller for R4 - but I know it doesn't work for Gran Turismo :)

I'm pretty sure RR V works with it. I remember seeing the support icon for it on the back of the package. And I think Gran Turismo 2 might support it. I'm not sure though, because I don't own a JogCon. I'm just going on hearsay.
I think if I get bored later, I'll go to BB/Game Rush and dig through the PS1 stuff and look for more NegCon games.
By the way, I read on Namco's Japanese site that these games also support the NegCon:
Ace Combat
Ace Combat 2
World Stadium 2
World Stadium EX
Galaxian 3

Ace Combat 2 & 3 definitely support the NeGcon. As for 4 & 5, I'm unsure. Will have to try out 4.
All of the Ridge Racer games work with the NeGcon. Not sure about R:Racing Evolution or Street Racing Syndicate though.

Not sure about R:Racing Evolution
Sadly, no. But it does work with my Driving Force, so it's all good. :-)
Another game to add:
Test Drive 4

neGcon + Wipeout XL = bliss

Ace Combat 4 Shattered Skies and Ace Combat 5 The Unsung War are NOT compatible with the neGcon.
However...
Formula 1
Starblade Alpha
Both are. Starblade Alpha works with the controller however it doesn't enhance it any since the twist isn't used. On the other hand the original Formula 1 (and the best F1 game ever IMO) has full support with a robust neGcon configuration menu and all the game menus are reskinned with the neGcon buttons labeling select / back / exit, etc.

Destruction Derby (full support)

The Italian Job - PS1 version based on the GOOD movie (full support)
NASCAR 2000 (full support)

Rage Racer (full support) -thought I would check to make sure
RC de Go! (full support although text in calibration menu is glitchy)
Alright, sorted my contributions are...
PlayStation
--------------------------------
Aquanaut's Holiday (supported, no twist)
Destruction Derby (full support)
Formula 1 (full support)
The Italian Job (full support)
Jupiter Strike (supported, no twist, breaks gameplay)
NASCAR 2000 (full support)
Rage Racer (full support)
RC de Go! (full support)
Starblade Alpha (supported, no twist)

Alright, here's the list so far. This includes my own findings, stuff from this thread, and info culled from various web sites. This is by no means exhaustive yet, but it's a good start. I'll probably make a small web page out of this list eventually so it looks less crappy.
EDIT: Got a web page made.

RC de Go! is a US release. In fact it's the only of the ...de Go! series to ever have a US release. A shame that this game was so hard to find during release (most places it was only $10) since it's like RC Pro-Am meets Gran Turismo.

Speed Racer is NOT supported, I checked this last night when I was going through my games. Was a bit surprising since the game's core is pretty much cloned from the Ridge Racer engine.
You might also want to add "Tokyo Highway Battle" to the unconfirmed list. It's an older PlayStation game but I'm pretty sure it had neGcon support.

Okay, all fixed. Strange that it doesn't work with Speed Racer. I guess the report I read was incorrect.
And here's a question: can anybody confirm that the Negcon works with the Ridge Racer Turbo disc included with R4? I suspect it does, but I want to be 100% sure.

You know I was going to check on that last night. Well I just tried the R4 Bonus disc and guess what, unsupported - you can't even navigate the menu.
