Despite the issues Teddy mentioned, I've been finding myself having a shit load of fun playing Beatle Adventure Racing.
Ridge Racer 64 was also quite a bit better than I had expected it to be. Haven't played it in about 2 years though, I just haven't felt the desire to go back to it after going all the way through it last time.
Diddy Kong Racing was pretty damn fun, but I haven't played that in forever. It's on my "to buy" list, so whenever I see it locally I'll pick it up.
I've never played or even SEEN Excitebike 64, so I guess I'm going to have to dig up a cart of that sometime. I think I saw it for ~$5 on EB's site, so hopefully I'll get lucky and get one with the label still attached.

This thread is directly responsible for me picking up Stunt Racer 64, Cruisn Exotica, and Excitebike 64.
Stunt Racer 64 - Currently on the second racing league and having an absolute blast. Great graphics, driving model, and tracks. Can't wait to unlock all of these bad boys. Once I get better, I'll record some gameplay videos to help spread the love for this game. I think a big reason why it's so often overlooked is not just that it was a late release but also because it's not currently emulated :(
Crusin Exotica - Pretty faithful port of the arcade game. Color me impressed. Cruisn USA left such a sour taste in my mouth that I never really desired to pick this up, but after hearing some good scoop on the quality of the port I decided to take a chance on it. I sometimes play the Cruisn Exotica machine at Walmart while waiting for my photos to come out, so I had a bit of a frame of reference when I fired this puppy up. Thankfully it's emulated so others can see for themselves just how hot this one is.
Excitebike 64 - Got it the same day as Stunt Racer 64, fired it up, and instantly felt disappointed. Choppy framerate really got in the way of the controls for me, so I guess it's just something I'll have to adjust to over time. Don't really feel dedicated enough to doing so right now, though...having too much fun with the other two games :)
Everyone seems to agree that Mario Kart 64 was a blast, so why did Gamespot rate it so low when it came out? It received only a 6.4 overall rating. Click here (http://www.gamespot.com/n64/driving/mariokart64/index.html) for the review.

Well... I wouldn't say EVERYONE. I love it myself, but I've come across countless people that don't like it and much prefer the original (or even Double Dash). I think they're on crack and have no friends to do battles with, but that's just me. :P

I just got 3 more to ad to the list:
Top Gear Rally
Roadsters
Supercross 2000

Top Freaking Gear Rally! It had a custom paint job mode I haven't seen in any other racing game since. It will always be my favorite. Especially with the weather changing effects. Those two features are the only reason I bought it, and I haven't been let down yet.

Mario Kart, of course, especially with friends.

I don't have one favorite racer for the 64. But, I never did own any of them except for Hot Wheels Turbo Racing. My little brother and I used to play that game (and Paperboy) so much.
I used to rent those Crusin' games from Blockbuster a lot. I really liked those. One of them I couldn't seem to find sometimes. I liked how they had different types of cars to choose from (like an 18 wheeler without the back and the sardine) instead of just different sports cars.
Mario Kart 64 was fun and I rented that one a couple of times. My uncle owned it though and whenever I went to his house I got to play it there. It was hard to play multiplayer in that game because everyone wanted to play as Toad.
Re-Volt was such a great game. I love the idea of being small in a game and getting to go around in rooms and other places normally just a little bit larger than I am and exploring there. My favorite car in the game was probably the one that had the four tires on it's side and if it flipped over, it could still keep going because of the way the tires were placed. I wish they would have put the Alien ship in the game like they did in the PC version.
The last N64 racer that I can think of that I really enjoyed was Diddy Kong Racing. That game had some cool vehicles. Sliding around in that hovercraft thing was fun.
The N64 was a great system. I plan to download many of the games from that system when the Revolution comes out.

mario kart 64 is my top pick. my old army buddy's and i used to play 4 players during our lunch break. we were so competitive. we usually played 2nd, 3rd and last place give up the controller(winner stays). normaly we would have 7-8 people wanting to participate. my second fav would have to go to wave race 64! this was one of my first games for the system and i pracitically played mine to death. :)

San Francisco Rush comes to mind as my favorite. It's the one game that I keep on coming back to. Re-Volt and Rush 2049 are pretty good too, but the DC versions are far superior.

Really liked "F-Zero X", was a great successor to the SNES version. Speed feeling was excellent. Great.
"Diddy Kong Racing": A masterpiece from Rare. Liked this one way more then Mario Kart. I played this together with my sister for hours and hours. But can't now remember if we finished it or not....
"Cruisn'World" was a great funracer, also one of my top N64 racing games. It was nothing special graphics wise, but a lot of fun in multiplayer.
And you guys told me many other games which are worth buying. Poor wallet LOL

I like both Vigilante 8's as well. (Just played it before I came here). However just because it has cars in it , it doesn't actually count as a racing game. Your not racing and completing laps and whatnot, your driving freely while blowing everyone up. Great game though. :D

Wave Race 64 was my favorite that courses were all really cool and challenging. Me and my borther would constantly try and beat each other in time trial mode. Also all of the tricks you could do were fun.

1. Mario Kart 64
Ultimate racer and deathmatch in go-karts. The matches could go on for hours either way. Even with only 4 maps to choose from, it was still crazy. As for the racing maps, they were great! I don't know of many better layed out racing terrain on the 64.
2. Diddy Kong Racing
What made this such a great game was the characters and vehicles. Airplanes, hover boats, and race cars... what a great mix.
3. Crusin' USA
Personally one of my favorite racing games without any of that weapons and powerups crap. Pure racing fun and skills.
4. F-Zero
My god, huge selection of players, vast 3D maps, and crazy levels. Just pure fun, I mean come on, it's F-Zero!
5. Wave Race 64
I don't seem to find much credit for this game, but I loved it. When I first played it I swear I was in the ocean and that's good enough for me.

Mario Kart 64 was one of the few good games the N64 put out, and even then I'd rather play the original OR the gamecube version.

3. Ridge Racer 64. Nowhere near as beautiful and polished as R4 on the PSX, but the racing in this game is better.
2. Top Gear Rally. Exemplifies nearly every technical criticism leveled at the N64, but this game still manages to be great fun.
1. F-1 World Grand Prix. I can't really say for sure why I like this game so much. I don't know anything about F-1. This is just an intense and utterly engrossing racer.
Excitebike and F-Zero X are disappointments.

People badly reviewed it originally because of AI issues. Which I always thought was dumb because even the SNES version had some pretty cheap AI.

Diddy Kong Racing is better single player and Mario Kart is more fun when your friends play with you. I think Mario Kart is also harder then DKR, as the other racers seem to be faster.

I found Star Wars Episode I Racer to be a lot of fun. It got very difficult in the later levels though.

But the SNES AI is much different compared to Mario Kart 64's AI.

Mario 64's AI was ruthless. It had that stupid comeback scripting where it didnt matter how fast or how far ahead you were, the AI's speed was adjusted so they could catch up.

On some levels its possible to overlap them (desert train level) but on the 150cc circuit forget about it.

My friend and I used to get so frustrated at the 150cc AI difficulty. They just rape your skills at that mode. You can barely every edge past them and if you do they shell you or you get lightning'd or some crap like that.

I could never finish 1st at Bowser's castle lol.
Its true that you could be half a lap ahead and all of the sudden you see them creeping up on you on the radar.
