I gotta go with Yoshi's Island on the SNES.
Those child-like graphics were sooooooooooo cool. (and beautiful) :-P
All of the Donkey Kongs on the SNES were very nice as well though.
Also... when you've got a nice, bright Vectrex infront of your face, that is hard to beat as well :D

I liked Riven 'cause it was perrrrrty.

Now take that same formula and put it in to Kirby... Blech! I loved Yoshi's Island unique sense of Style. It was like looking at a Crayon Drawing by Michelangelo Buonarroti. Kirby's Dreamland 3 just ruined the whole thing... it was almost too child-like.
Metal Slug is also an excellent looking series. Can't wait to see what Atomiswave will do for it!
I'm just about to start Sudeki on my Xbox. It looks to be a game with great graphics.
I'd say that the best graphics that I've ever seen usually come with every game that Rare makes. IMO there's no company that's consistently better at video game graphics. They owned the N64 and if you've seen the new Conker game, they've mastered the Xbox as well. Their in-game graphics look better than most people's CGs, and their CGs are mindblowing.
DOA Beach Volleyball (yeah, I know it's not Rare) has one of the best opening CGs that I've seen.

Zelda: Wind Waker.
Thinking back of playing through that game I honestly cannot even remember controlling Link. It was so perfect that it just left a sensation of having been taking part in that adventure.

For me it would be Stunt Racer 64. Very nice looking game. To bad it was a rental only. I got it so I'm happy.

rise of the robots - snes. heh, you know you were a sucker for those screen shots.
siren - ps2. need to finish this eventually. early on in the game, you have to escort a blind girl through these muddy fields...i actually stopped playing for a bit and just admired the stunning beauty.

Castlevania SOTN and Valkyrie Profile. SOTN is a really nice game visually. The best that I would say would be Valkyrie Profile though. When I first played it, I didn't know what to think. I was mesmorized by the beautiful visuals!
