I say easily. The graphic quality of Dawn of Sorrow and Portrait of Ruin easily exceeds that of SOTN, IMO. The music would probably be a different story though. I say bring it on. You can never have too many ports of a true masterpiece.

These cartridges are dirty as hell and I'm not going to take it anymore!
Possible? Yes. Probable.. no.
The game would fit, music and all onto a big enough DS flash card. But whether or not the DS could stream off the card and not encounter slowdown I dont know. Maybe a DS or hardware expert could answer this, I am not sure about the transfer rates off the DS card slot.
Worst case scenario would be sampled music, which wouldnt sound bad, but not nearly as good as the streamed music of the original.
I'd buy it if they utilized the touchscreen, like say to move your familiar around, or make a motion on it to do one of Alucard's spells.
I'd be surprised if the DS couldn't do it.
That being said, since its being released this summer for the PSP I'm not going to hold my breath.
The graphics could easily be done, but the music would most likely take a big hit. Personally, I'd rather not have the game at all than have a port of SotN with neutered sound.

It would be a smart business move, but they'd be ruining a classic in doing so.
Besides, the game already has easy enough access and is about to become even easier to play (with the previously-mentioned pending PSP release). I'd rather not hear an even greater number of current-gen gamers whining about having to play a game made in the "ancient" year of 1997.
I don't think Konami even considers this a potential money maker anymore. It goes for $10 on XBLA and is essentially a "free" bonus feature for buying another Castlevania game (PSP).
Plus...who wants to see SotN morphed into Konami's lame DS "anime" redesign of the series artwork.
