Crimson Skies is great and cheap. I've seen it for $2.99 to $4.99 at various EBs.
There's a game called 'Wrath Unleashed' for the original Xbox I highly recommend... Its basically an update of Archon; a basic Fire Emblem meets Dead or Alive. simple, but fun.
Morrowind is an obvious one if you like 200 hour epics.
the Xbox version of Halflife 2 is more than competent if you haven't played it on PC yet. If you don't mind the frequent loading, and don't want to wait for the Orange Box version, its an excellent ten dollar spend.
The port of Silent Hill 2 is superb too. It has a Resident Evil 4 'separate ways' like alternate character and slightly better graphics than the PS2 version.
Breakdown was an interesting experiment worth playing, too... It was basically a weird hybrid of FPS and beat 'em up. This is another one I'm pretty sure you can pick up cheaply.
Stubbs the zombie, No discussion! Buy it and enjoy! I paid $20 for mine and it's one of my favorite xbox games.
Darkwatch for the XBOX was fun.

That'll start you off. Give us a genre and we can come up with better sugguestions.
I think Ninja Gaiden Black is the best game on the original box.
I'll second Stubbs! Unique gameplay! Should you get the chance to play it, when you're at the part where you're peeing into the towns water supply, give Stubbs a whirlaround. If you've ever seen a fisherman spreading his arms to show you the size of the one that got away, you'll get a chuckle of what Stubbs is trying to imply about the lenght and girth of his unit!
I'll assume you have other consoles and are more interested in some suggestions for BC Xbox exclusives. Here's a few I think are worthy of consideration. I've included the Game Ranking scores and ESRB ratings in case any of those are useful.
Action Games:
Buffy the Vampire Slayer 80% (T) - I've never watched the TV show this is based on, but I did enjoy Buffy's sarastic witticism's whilst slaying vampires and such.
Thief: Deadly Shadows 81% (M)
Genma Onimusha 81% (M) - an action/survival-horror hybrid pitting a samurai against demons. This is a "Director's Cut" version of Onimusha with new enemies, areas, costumes, cutscenes and some general gameplay improvements. It's a shame Otagi 1 & 2 aren't BC, though!
Star Wars: Jedi Knight-Jedi Academy 75% (T)
Sports Games:
Deathrow 79% (M) - futuristic basketball style game that provides plenty of opportunities to beat the Hell out of the opposing players. Liberal doses of potty mouthing and flipping people off gives it a well earned mature rating.
Tony Hawk's Pro Skater 2x 83% (T) - a director's cut, so to speak, of Tony Hawk 1 & 2 with new levels and updated graphics.
Shooters:
Brute Force 78% (M)
Ghost Recon: Island Thunder 81% (M)
Ghost Recon 2: Summit Strike 82% (T)
Star Wars: Republic Commando 79% (T)
Unreal Championship 2: The Liandai Conflict 87% (M)
Razes Hell 72% (M) Pretty good sense of humor. You replentish your health by smashing people into giblets and consuming them. Naturaly everyone thinks your some kind of monster and often plead with you not to eat them. Damn shame Armed and Dangerous isn't BC because it too had a great sense of humor.
Strategy Games:
Sid Meier's Pirates 80% (M)
Kingdom Under Fire: The Crusaders 81% (M)
Mecha Games:
MechAssault 2: LoneWolf 81% (T)
Phantom Crash 74% (T) - Definately different. A Japanese anime style game with TONS of character dialogue and a cat computer.

Sega GT 2002 82% (E)
Futuristic Racing:
Quantum Redshift 75% (T)
Pinball:
Pure Pinball 68% (E) - well, at least it's exclusive!
Fighting Games:
Dead or Alive 3 85% (M)
Dead or Alive Ultimate 84% (M) - My theory is - if you can't garnish a Mature rating in a fighting game, why bother?
Light Gun Games:
The House of the Dead III 70% (M)

Just finished this game myself and I also recommend this.
However, you're not smashing people, you're smashing Kewletts - the cutest, most adorable creatures in vidgaming. This makes it even better.
Most of the humor comes from the "death rattles" of the Kewletts as you kill them. My favorite is the one where the dying Kewlett goes into some kind of Star Trek mode and does some of the character voices. And who can forget this one?:
"It's all fun and games until someone loses an eye.....or a pancreas.....or *cough* a lung.....(dies)"
As a side note, since you're talking about playing them on a 360:
Ninja Gaiden (Black), Star Wars Battlefront II, and Unreal Championship 2: The Liandri Conflict all look very nice in widescreen HD on the 360.

The first one not the scond one. I loved how my friends could control the bosses and any enemy AI, and also the hidden multiplayer mode was a blast! Gotta know the code though to unlock it.
Truly an Xbox diamond in the rough.
I didn't think Morrowind worked on a 360.
