use the analog triggers well? I'm really curious, because it's a pretty novel feature.

Almost every Dreamcast racing game uses the triggers for acceleration and braking. That's the best use of it I can think of, for sure, and while it doesn't make a huge difference, it is nice...
As for the Saturn, because only the 3D Controller had the analog buttons and not any of the others controllers, they weren't used by much as anything other than digital buttons.

Almost every driving game on Dreamcast (I say "driving" because it includes Crazy Taxi), and a few later ones for Saturn as well, use R to accelerate and L to brake (or at least have the option). For Saturn, I know that Daytona USA C.C.E. uses it, and I'm pretty sure Sega Touring Car does as well, although it's an awful game. If we're including imports, add Syutokoh Battle '97 (aka Drift King '97), Choro Q Park, GT 24, and I wanna say Touge King the Spirits 2 as well.
The Aero Dancing/Aerowings series and Airforce Delta on the Dreamcast used the analog triggers to control the rudder.
Duke Nukem 3D on the Saturn uses the analog triggers to control the speed of your strafing.

I knew the Saturn games would support the 3D controller as far as analog steering (because they already had support for the analog steering wheel), but I didn't realize that the later titles also supported the analog triggers. I broke out both Daytona USA C.C.E. and Sega Touring Car tonight and gave them a whirl. Sure enough they do support the triggers! This brings an entire new experience to the games!
Once I started playing racing games on the Dreamcast I could never go back. The triggers are absolutely friggin' perfect for racing games. It's one of the smoothest most natural control schemes ever created (I'm glad the Xbox continued the trend). Now, thanks to J_factor I find that a handful of Saturn games are playable in that fashion as well!
Other than these two domestic titles and the imports that were mentioned are there any other Saturn racers that use the triggers?
If a god is willing to prevent evil, but not able, then he is not omnipotent. If he is able, but not willing, then he must be malevolent. If he is both willing and able, then why is there evil? If he is neither able or willing then why call him a god?
I know Sonic R on Saturn uses the L and R triggers to drift.
