I'm not sure about exclusively but I usually go for some dark RPGs like Shadow Hearts, Folklore, some of the MegaTen games. I'm thinking of mixing it up this year with some Ao Oni and Yume Nikki though.
I love Horror games that focus mainly on atmosphere like Silent Hill and Fatal Frame but I play those year-round so I tend to try and find something new each year.

Imagine RC Pro-AM while running over zombies. It's awesome.
Resident Evil (Sega Saturn)
Dracula The Undead (Atari Lynx)
Silent Hill (Playstation)
Escape from Monster Manor (3DO)
Alien VS Predator (Atari Jaguar)
As a side note though, the new Haunted House is well worth checking out and a good time with the lights down and I have to also have an honorable mention for Grabbed by the Ghoulies on the original XBOX.
Except for Demon's Souls which was because of a pure black server, I don't play games just because a specific holiday. If playing on a certain date gives me a bonus, such as Gurumin giving you the Christmas outfit, I just change the date and reload the game.
Super Castlevania IV
Castlevania: Symphony of the Night
Zombies Ate My Neighbors!
My brother makes it tradition to play a different Castlevania game every year around Halloween. I love the two games I mentioned to death. Also, Zombies Ate My Neighbors is a Halloween staple.
Splatterhouse: Wanpaku Graffiti- nothing else seems very Halloween-ish to me, possibly Zombies ate my Neighbors, maybe.
Killing Floor!! It even got a special Halloween update with various stage changes and new themed monster designs. Perfect halloween game to play with friends.
Silent Hill.
Resident Evil.
Dark Souls
Penumbra.
I don't have a top five, but by coincidence I recently picked up Decap Attack and Addam's Family Values and those are definitely in season.
I always play Zombie Revenge on the DC for Halloween, that's my little ritual. Might play a little Castlevania Chronicles or a Wii light gun shooter this year, depends if I have any time.
If you can't do it with 8 bits, you don't need to do it!
That reminds me, I need to boot up Saw II on Halloween for an achievement.

Having a costume party on Saturday evening, we will likely be doing the "standard" party fare games, nothing Halloween-centric, but always fun stuff for parties:
Rock Band 3
Singstar
You Don't Know Jack
Buzz Quizz World
Fighting Games
Move and/or Wii motion controller multi-player games
"And the book says: 'We may be through with the past, but the past ain't through with us.'"
I'm shocked no one mentioned any of the House of the Dead games. I had a couple of Halloween parties where I had HOTD2 set up with 2 light guns. Seemed very appropriate. That being said:
House of the Dead 2
House of the Dead 3
House of the Dead: Overkill
Castlevania: Bloodlines
Vampire Night
Pretty much any of the Silent Hill games.
