The entirety of the Metal Gear Solid series OST's are awesome.
"Beginnings" and "Vampire Killer" from the Castlevania series
The Oblivion and Morrowind soundtracks by Jeremy Soule
The opening song in Legend of Mana is great. I'll sometimes start a game just to hear the song.
And lastly we have the Persona 3 soundtrack. It's great J-Pop, which is not a contradiction after all.
The most memorable music pieces for me have been:
The music from Shadow of the Beast and the intro music to Leander, both by Psygnosis for the Amiga.
Most of the music from the Atari Jaguar CD game Battlemorph. It always fit the setting perfectly.
The music from the beginning of Rygar from the NES version.
The majority of music from the Halo series. Very mood setting and atmospheric.
I'm sure that there's loads of other soundtracks that I've really enjoyed in the past, but for some reason I'm drawing a blank at the moment. I either can't remember what game the music came from or I can't recall specifics enough to pull it out of long-term memory.
probably ocarina of time music, and also pokemon red version for gameboy, that duh duh, duh, duh, duhh, duh, music. lol.
and for some reason not music, just that voice, on wave race for n64 that goes WAVE RACE! lol.

My favourite video game tune has been for the longest time, the Tallon Overworld theme from Metroid prime.
