AA= Anti-aliasing. When enabled gets smoothes out the jagged edges you see in games.
AF= Antiscopic filtering. This helps textures look detailed from a distance rather than get blurry as they get farther away.
You've got two of the most high end (and expensive!) cards that are currently out there....if I were you, I would turn *everything* up in the graphics department and put them to the test!

Leave them on default settings. Every game will utilize those cards differently, so unless you want to tweak every game seperately (generally speaking you should be able to max settings on older games, but it might slow down newer games) it's best to just leave 'em be.
I would run every game at max detail with both settings on the max. Of course that is if you cpu and ram is up to it, but with cards like that I doubt you skimped on the others.
