Whta do you mean? Do you mean games like Zelda or RPGs where you can change the power of attacks ue to your actions (like Paper Mario).

No one mentioned Shenmue series, it involves a lot of fighting moves, it was originally named Virtua Fighter RPG.
Hmm... never knew Shenmue played out like that, gotsta try the Xbox version now.
But if that qualifies, I'd think Hybrid Heaven, for Nintendo 64, would too. Cool Fighting system made an otherwise boring game quite enjoyable... quickly found itself in the bargain bin too, I'd imagine it's quite cheap now.
