Gyruss and Spy Hunter are two of my all time favorites in this catagory.

...not a whole lot of the early stuff had music playing in-game, or so it seems. I tend to remember music being prevelant in between stages, especially in PacMan games...but the Sound F/X are what always stood out more in the old days, especially in games like Defender and Robotron.
My favorites are Donkey Kong, and everything about Robotron.
