Just bought a PS3 40GB, and I thought the HD space was the only difference but I noticed also it only has 2 usb ports instead of 4. So I was wondering if a usb hub would work on the PS3.

Yes. USB Hubs do work with the PS3. You might want to do a search on potential compatability between makes and models.
But the question is...what USB items are you hooking up in tandem that would require more than 2 ports?
4 3rd party wireless controllers?
A wireless keyboard, mouse, and Playstation Eye?

A Kensington 4 port hub is reported as tested and working on a PS3 with 2 USB ports.

After I noticed now how the PS3 works, why would I need 4 usb's? or even 80 GB for that matter? My music and everything I keep on the computer so I can always switch what music I want.
Yes. It does stream media rather nicely if you can get your computer to allow it full access.
Although myself and other users have had issues setting up media streaming AND getting full online gameplay working simultaneously.
When I want to do one or the other I just turn one on and the other off.
But, to address the question of "why would you want music (or videos) on your PS3 HDD?" ...
... IF you have a PSP, Sony just updated the PS3's firmware last night to allow for remote "turning on" and "turning off" of your PS3 from any Wi-Fi hotspot in the world via the PSP.
At the present time you can access all music, video, and picture media on your PS3's HDD streaming over Wi-Fi access points via your PSP, and even take advantage of the PS3's better web browser (with much larger temp cache than the PSP's).
You can also play a game of LAIR if you happen to have that in your PS3 ... currently it's the only game playable via "remote connect" ... but I'm assuming that just about everything will be in a future update.
