Rondo of Blood, definitely. AD X68000 I don't consider to be import only anymore, unless you're talking about the actual disk for the X68000 PC.

I third that. Not only does it look better than it's cousins that are on "superior" systems... but it pushed the limits of the system it was on. A work of art.
Dracula X PC-Engine is great.
Castlevania - SotN PSX is the japanese version different to the PAL version (I think maybe different to the USA version too). You can find 2 more friends, but they do near nothing. So maybe not complete so deleted in the PAL version.
Castlevania - SotN Saturn is too different to the PSX version. You have more levels. It is released later, so they add more levels for the Saturn. So is interesting for fans too.
Castlevania Super Famicom is the japanese version different to the PAL Version (maybe to the USA NTSC version too). Some grafics are different and some colors.
The nosegoblin and the sprite (I think) were the two characters removed from the US and Euro versions of SotN. They really didn't do anything (in fact, the nosegoblin was kind of an in-joke regarding an actor in Japan) so we didn't miss anything.
Dracula X for the Turbo Duo. It's the only major Castlevania game to not make it to the US. I really hope the Castlevania Chronicles series continues, so the game might make it over to the US, but the chances are looking pretty slim.
Also Kid Dracula for the Famicom is worth checking out. Very different from the gameboy version which was released in the US.
