They aren't cutting down forests for paper production anymore, trees are grown on tree farms specifically for use in paper production. If there's less demand for printed paper then less new trees get planted. It's like how Christmas trees are specifically grown in tree lots every year.

If anything insisting on recycling old paper for new paper production can be worse for the environment, it takes more energy and resources to produce new paper from old paper than just making new paper from completely new material.
